Sponge cake and DLST

Left over chocolates...we counted 22 kids stop by for T/T last night. We still have a whole bag of chocolates left over.
Growing up we don't celebrate Halloween back home but instead we celebrate all saints and souls day every first day of November. It is a day of festivities in cemeteries around the country. I remember that people usually bring presents, flowers, food and drinks to the grave site. Family members will gather to pray and honor the dead and most usually stayed up all night at the grave site. I remember it was actually fun. We don't do it here in the US, instead we celebrate Halloween. Anyway, just a thought...that today is all saints and all souls day.

I realized that Tyler does not like to sleep with us anymore. Before we move him to his own room at 4 months, he was in our room and he sleep in the pack and play. Once in awhile, I used to bring him into our bed when he cries in the middle of the night and when I'm nursing. I just like to cuddle with him. *grin* Those days are long gone. Early this morning, I heard him cry from his room so I thought it's a weekend and I took the opportunity to bring him in. It did not last very long, he kept turning and turning and making noises. I thought at first he was just hungry then it occurred to me that he was a little bit irritated that he does not have room to move around. So after few minutes I decided to put him back in his crib and seconds later he was back to sleep. ahh..my baby's growing up.

I am so happy I get to spend all day with my boys today...my kind of day. We had lunch at HSY again...I just love Korean food and bubba for dessert. Here's Jon showing Tyler the Soon Doo boo (soft tofu soup).
Afterwards, we stop by the Asian grocery store to get the ingredient for tomorrow's lunch. We're celebrating Ate's birthday tomorrow and we are preparing some filipino dishes that she requested...(I'll make pancit and pinakbet while Ate is bringing pork skewers). I can't wait. Andrea and them are coming too.
Jon prepared dinner tonight. He was craving for burgers and instead of eating out again, we decided to stay in. His burger is actually pretty good and probably a little healthier. I also have fun with my food. Doesn't it look like pacman eating my fries?
Since I am gaining an hour tonight, I decided to bake a cake for ate. My original plan was to make her a cake with a shoe made of gumpaste, I scratch that idea because even though she would appreciate the thought, I will just end up eating the cake by myself. She likes light cake so I am going to attempt to imitate the Asian style birthday cake. After searching for a long time online for the recipe, I finally gave up and bake a sponge cake instead. I got this recipe from my mom in law and I gave it a shot tonight. This cake is so delicate, I can't wait to taste it tomorrow.
Here's the ingredients...



SPONGE CAKE

Sift together the following dry ingredients:
1 1/4 cups of cake flour
1 cup of sugar
1/2 tsp baking powder
Combine the following wet ingredients:
1/2 cup egg yolks (6 medium)
1/4 cup water
1 tsp vanilla extract
1 tsp almond/lemon extract
Whipped these ingredients: (beat with electric mixer at high speed until soft mounds)
3/4 cups egg whites (6 medium)
1/2 tsp salt
1 tsp cream of tartar
Add the dry ingredients to the wet ingredients. Fold the mixture 1/4 at a time very gently into the stiffly beaten egg whites until completely blended. Do not stir. Poul into an ungreased 10-inch tube pan. Cut gently thru batter to remove any air pockets. Bake in 350F for 40-50 minutes. Invert pan immediately when done. Cool in the pan for at least 1 hour.
I used 2 8 inch square pans so I changed the time 30-40 minutes. Here's the outcome.
