Te Ji's big day gathering

My side of the family came over today for lunch and dinner to celebrate my sister's bday. We prepared filipino food per her requests. It was fun having them over and they also have a great time. It was pretty relaxing day and I'm very happy. Tyler enjoyed seeing Jaidin too. He was still adjusting to the time change, he usually goes to bed by 730pm so at 630pm tonight he was ready to sleep. We tried to stretch it a little later so he can adjust to the new time right away.

I started preparing early this morning...cleaning and cutting the vegetables so that when my sister arrive she can just put it all together. I felt like her Sous chef which I didn't mind at all. I made pancit and pinakbet and she brought pork kawali (deep fried pork belly).

Pinakbet
Sauteed the following ingredients: Onions, garlic, ginger, long beans, eggplant, bitter melon, eggplant, green onions, kibochi squash, shrimp and chicken. I used soy sauce and salt and pepper. I didn't add the shrimp paste.

Pancit
Sauteed the following ingredients: garlic, onions, celery and carrots. Add shredded chicken and shrimp and season with soy sauce. Add chicken broth and salt and pepper to taste. Let it simmer for few minutes then add the cabbage. Last add the noodles and mix. I also finished the cake for her. It was hard to use the whipped cream for icing because it does not hold up like the butter cream does. It does not look as good as I wanted but it tasted so close to a cake from Asian bakery. I was satisfied with the outcome and it was also the first time that Jon was anxious to cut my cake.
