Corn Fritters

On my way to work this morning, all I can think of was corn fritters...don't ask me why but I was craving for it, I would eat it if it was available right there and then. I know I know it's not healthy but it just sounded so good this morning. So, as soon as my co worker came in, I urged her to go out to lunch with me to Canyon's just to satisfy my cravings. I had their famous corn fritters of course and enchiladas. It was good, I was happy *grin*...It's actually pretty easy to make. I found the recipe from about.com. I may have to try to make it one of these days.

CORN FRITTERS

2 cups flour
1 tablespoon baking powder
1/2 tsp. salt
1/4 cup sugar
2 eggs, beaten
1 cup milk
1/4 cup melted butter
1 can whole kernel corn, drained (or about 1 1/2 cups frozen, thawed or fresh)
powdered sugar or syrup

Preparation:Sift flour, baking powder, salt and sugar. Combine eggs, milk and butter. Fold in dry ingredients (add more or less flour - enough to bind batter); add corn last. Drop by tablespoons into hot vegetable oil and deep fry about 5 minutes or until golden brown. Sprinkle with powdered sugar or serve with syrup or sweet butter. Serve corn fritters warm.
