

Today is also our potluck day. It's the first time for me with this team. Although my manager has requested not to make a big deal of her departure and wanted to have a low key exit, I took my chances anyway and planned a potluck lunch for her. Everyone in the team was up for it and they all brought food and drinks. We manage to keep it as a surprise to her until today when she saw someone brought in some food.Aside from the cake I also made an appetizer...Shrimp Salad on a mini phyllo cups. I made this one before for Sharon's bridal shower and it was a hit. I got the recipe from Food Network (Paula Deen).
Shrimp Salad

2 cups schrimp, cooked, peeled, and finely diced, about 1 pound
1/2 cup finely diced celery
1 tablespoon minced green onion
1 1/2 tablespoons fresh lemon juice
1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 (15-count) package frozen mini phyllo shells, thawed
1/2 cup finely diced celery

1/4 teaspoon pepper
1 (15-count) package frozen mini phyllo shells, thawed
Combine the shrimp, celery, and green onion in a medium bowl. In a small bowl, stir together the lemon juice, mayonnaise, salt and pepper. Pour over the shrimp and stir gently to combine. Spoon into the phyllo shells.
The potluck turned out good. My manager did not hate me *smile* for doing it and it was just nice to step away from our cubes and get to talk to my manager. That was nice. I also receive good compliments for the cake. Although, I really would like to find a good cake recipe. I'll try to search for it online.
