More shrimp salad?

I can't believe it! we are having another potluck! my former manager's farewell potluck was the only time we have for almost a year and I guess some team members enjoyed it so much they planned another one. Not only that, we are having a pumpkin carving. There are bunch of workaholic in our team and now they are taking some time away from work..haha! too good to be true. I did not plan this gathering this time around and just like the last one, everyone has signed up on what food and drinks to bring. I guess the schrimp salad on phyllo cups was a hit that I was asked to bring it again. Lucky for me, this is one easy dish to prepare, I might bring a dessert or something else too.
