Arroz Caldo

We've been having a bug this week. Tyler has stuffy nose (fortunately he does not have any fever), I have been coughing and Jon's has to come home early from work because he is not feeling well also. Luckily I was able to stay home and work from home today to watch Tyler. I decided to cook Arroz Caldo for dinner. Back in Cebu, I used to eat this dish when I get sick but the only thing is that I didn't know how to cook it. So I check online to see how others made it and I found it's actually pretty simple. I didn't have all the ingredients so I just made it with what I have...my version of Arroz Caldo. It turn out delicious and it hit a spot for me. I hope the three of us feel better soon...

My version of Arroz Caldo

Chicken (6 pieces of dark meat, or anything that you have)
Oil (for pan fry)
Onion (half)
Garlic (4 gloves)
Ginger (1 inch)
Fish Sauce (2 tablespoon)
Rice (2 cups)
Chicken Broth (1 can)
water (3 cups and more, depends on how you like the consistency)
Salt and Pepper

Pan fry the chicken until it's brown and set aside. Saute the onion and ginger until it is translucent and add the garlic (don't over cooked garlic). Add the rice, broth, water, chicken, fish sauce and salt and peeper. Let it simmer for 30-45 min or until its cooked. Stir occasionally. I kept adding water until I like the consistency of the dish. At the same time, I keep tasting it and add some more fish sauce, salt and pepper if need to.
