My kind of day!

The retirement luncheon for my friend Joanne’s mom was a lot of fun today. Tyler and I went to attend the celebration at Pagliacci’s pizza in Bellevue square. I also brought the cake I bake the night before and they like it (*smile* I’m glad and relieved…) Tyler did awesome also, he enjoyed being out and going to new places other than our living room and his bedroom. He played with Kelly, Auntie Joanne and Uncle Chris at the pizza place. He was so fascinated by the balloons that Joanne brought in. After lunch, we stop by for coffee at Starbucks and walked to Crate and Barrel to do some shopping…(love that place!) We got home right on time for his nap…and mine too *grin*.




Around 4pm, Auntie Jiji and Uncle Kevin came to visit Tyler. Jiji brought the ingredients for dinner (haha…she has to come and visit more often) and I help cook it. I made sure to keep notes on how to cook this dish because it’s so easy and tastes good. I’m not sure where she got the recipe but I intend to make it again one of this days. Here’s the recipe:

3 Thick slices of Pancetta (chopped in small pieces)
5 gloves garlic (minced)
1 pinch of red pepper flakes
3 Table spoon of Olive Oil
2 ½ cup of shredded Parmesan Cheese
5 Eggs (beaten)
1 box pasta linguini

While the pasta is cooking, heat the olive oil on a pan and cook the pancetta until it’s brown. Take the Pancetta out from the pan and add the garlic until its cook (not burnt). On a separate bowl, combine the eggs and the parmesan cheese then pour it on the pan that has the garlic on it. Then add the pasta and mix together with the red pepper flakes. Taaadaaa! Yummy pasta Carbonara.

With garlic bread, salad and wine and we have ourselves quite a good dinner.
